If we have five seconds to describe kombucha, we are saying „kombucha is a probiotic fermented tea”. The roots of kombucha comes from history, being thought to have originated two thousand years ago when was called the elixir of immortality. Maybe this is why kombucha has many legends, one more interesting than the other.
Kombucha is a living food based on sweet tea and SCOBY (symbiotic culture of bacteria and yeast). The entire symbiotic community is consuming the sweetener and releasing millions of probiotics in tea, the good bacteria that is balancing the human intestinal flora.
Brewing kombucha can be made by each one of us, being a very simple process but involving constancy, attention and love. This activity became a ritual for us.
